Beef Fajita Soup

This is a crowd pleaser and suuuuuper easy. Just slice, combine, and let the slow cooker work. I made a double batch tonight for my Bible Study and they loved it. I go the recipe from my roommate who got it from the Haney Fam. You want to know what else I got from the Haney Fam. A homemade jar of jalapeño jelly. I can’t wait to pour that sucker on a bar of cream cheese and dip some crackers in. Yum!

1 lb. think beef, sliced into fajita strips
1 can (15 oz.) pinto beans, rinsed and drained
1 can (15 oz.) black beans, rinsed and drained
1 can (14 1/2 oz) diced tomatoes
1 box Trader Joe’s beef broth
1 small green bell pepper, thinly sliced
1 small red bell pepper, thinly sliced
2 tsp. ground cumin
1 tsp. seasoned salt
2 cloves minced garlic
1 tsp. black pepper
1 small can diced green chilies (optional)

Toppings: sour cream, shredded cheese, chopped olives, hot sauce

Combine all the ingredients into the slow cooker. Cook on low for 8 ours. Serve with whatever toppings you like.
