Sweet Betties


This recipe, given to me by Sweet Betty, was entitled “Neiman Marcus Squares,” but in the office we know them as Sweet Betties.

1/2 c. butter, melted
1 box yellow cake mix without pudding in the mix
3 eggs
1 pkg. cream cheese softened
1 box powdered sugar (16 ounces)
1/2 c. flaked coconut
1 c. chopped pecans

Combine butter, cake mix and 1 egg. Stir together until dry ingredients are moistened. Pat mixture into bottom of well-greased 9×13 and 7×11 pans. Beat remaining 2 eggs lightly, then beat in cream cheese and powdered sugar. Stir in coconut and nuts. Pour over mixture in pan, spreading evenly. Bake at 35 degrees for about 30-35 minutes or until golden brown. Cool pan on wire rack till room temperature. Cut into small squares or bars.
