What do you do with left over blueberries? There are a number of things you can do, but here is one amazing option –

WHITE CHOCOLATE BLUEBERRY SCONES

Follow the directions on a Bisquick box for making Strawberry Shortcakes. Instead of topping with strawberries and whip cream, try mixing in blueberries and white chocolate chips. Drop in blobs and bake. Yum. I used blueberries I had frozen and then defrosted, but I’m sure fresh or frozen would work as well. If you wanted to make the scones fancier, you could dust them with large granules of sugar, or instead of placing white chocolate chips in batter, you could melt the white chocolate and drizzle on top after the scones are baked.

Bon Apetit!
