Thai Lettuce Wraps

I recently made these for my roommates, and they were a big hit! I thought I would share the recipe here. As with all of the recipes I create, I substitute to use whatever I have in my fridge or pantry. Enjoy.

What you will need:

Lettuce (You can use any kind. I use leafy because it has more color which means more vitamins.)
Cooked Chicken Breast (Shredded or cut into cubes)
Red Onion (Minced)
Assorted Bell Peppers (Thinly Sliced)
Cucumber (Chopped)
Thai Peanut Butter Sauce *See Recipe Below
Sesame Almonds (Trader Joes or you can use Peanuts)
Potato Chips (Baked if you want to be a little healthier)
Cilantro (Finely Chopped)

Wash and dry lettuce leaves. Use smaller inside leaves and place on plate with the sides of lettuce curling upward. Top with next four items. Drizzle with peanut sauce and then top with nuts, chips, and cilantro.

*To make the Peanut Sauce place sesame oil, soy sauce (only if no one is allergic), Thai fish sauce, minced garlic, minced ginger, vinegar, lemon grass, and brown sugar in sauce pan. Cook till it bubbles. Then add 1 cup hot water and 1 cup peanut butter. Stir until mixed and bubbles. Add coconut milk until the mixture reaches the desired consistency. (The sauce is also good with rotisserie chicken, pasta, salad, as a dip for potato chips, carrots, and cucumber and stirred into Thai Coconut Curry Soup. Yum!)
