Another Way to Celebrate Valentine’s Day

These also showed up on one of the girls’ wings in honor of Valentine’s Day. It’s always a good idea to make a single advertisement for your buddy in the dorm to put up on your sister wing :). Just to clarify for those of you who may not have a sense of humor, this was a prank and a joke. It is funny :). These images have been slightly doctored to protect the innocent and the guilty.

Out of Eggs?

Last week, I had just returned from the store, had just started making butter horns, and had guests coming in an hour, when I realized I only had one egg and the recipe had called for 3. Yikes! What’s a girl to do? When I text-messaged one of my neighbors and didn’t hear back right away, I called my mom.

Jenn: Mom remember that stuff you gave me that you can substitute for eggs?

Mom: Yes.

Jenn: What do I do with it?

Mom: Dissolve 1 Tb. in 3 Tb of water for each egg.

Jenn: Thanks. What’s it called?

Mom: Flax meal.

Jenn: You are the best. Thanks, Mom

It worked! I’ve had it in coffee cake before, but it worked in my rolls. They were speckled, but they were delish and nutrish :). Just thought I would share this info. Flax meal lasts in the fridge forever, so it’s nice to have a little on hand for when you are baking and out of eggs.

I love my job, so much so that I don’t spend much time blogging. I see more to be done than I can possibly do. My 500th post came and went without me even knowing because the last post was scheduled months ago :). Life is full but I wouldn’t have it any other way. My absolute favorite part of the job is the people I get to work with both in King Hall and in the dorm. Working with my RAs is probably my greatest joy. Here are the pictures from a recent photo shoot: the good, the outtakes, and the purposefully silly.

Sweazy is Safe!

Sweazy can sleep soundly because tonight I passed my Community Emergency Response Training. We had an emergency earthquake simulation at a Jr. High with many screaming victims. My personal favorites were the lady with the eyeball dangling from her socket or the kid with a pencil lodged in his head who handed me someone else’s amputated finger :). To commemorate this historic event, I’m posting a pic of Summer and I fighting a fire in training a few weeks ago.

My Birthday – 7/24/2011

I love normal birthdays spent in fun ways with people you love. This birthday I wish I could have had a few more people I love around me, but I always wish that. That’s the tension you feel when you keep loving more people and they live so many different places.

  • The day started with carpooling down to services at Grace Community Church with my friends Kellie and Rae with a pit-stop at Starbucks on the way.
  • We met other friends at church and added a few more we bumped into there and walked to the car on a side street where they gave me my awesome birthday gift (a toaster) and sang to me in the middle of the street. We then had hugs down the line. I’m sure we were a spectacle :)
  •  Next we headed down to Portos a delicious cuban bakery where we met two of my former roommies . We took our food to go to the Americana and had a picnic on the lawn. It was lovely!
  • Danae and Adrienne met us there. Adrienne treated me to an iced americano and when we got back there was a candle in my chocolate croissant and they sang to me again.
  • We walked around. Looked in the shops. Enjoyed the sunshine and the air conditioning and ran into more friends while out and about.
  • Kellie dropped me off at Jer’s. We chillaxed a while at his place before we went up to Santa Clarita.
  • Jer treated to Starbucks on the way up. Lots of caffeine. Tis the season :)
  • Jer being the good brother he is helped me hang some stuff at my apartment.
  • Speaking of hanging stuff, there was a sign hanging on my door that my former roommies made for me and flowers with a note from a friend too. Fun surprises to come home to!
  • Jer worked for hours while I made dinner.
  • I had been dreaming of making these items from what was in my fridge. Jer is always a willing guinea-pig.
  1. appetizer: stuffed mini-bell peppers – stuffed with a little herbed goat cheese, kalamata olives, and salami – and roasted to perfection. Slightly sweet, very salty, and oh so savory.
  2. salad: hearts of romaine with red onions, macadamia nuts, and a sprinkle of feta with bacon-wrapped, home-grown, roasted plums and balsamic dressing. If I do this again I will try adding a little brown sugar to the roasted plums :).
  3. main dish: grown up, baked mac and cheese – variety of cheeses, bacon, and ham
  4. dessert: vanilla ice cream and fresh strawberries
  • Lastly, I had many friendly facebook messages to respond to that evening. I was especially thankful to hear from my former students. That meant so much to me. I love them and can’t believe half of them will be seniors.

I didn’t take many pictures. I mostly have pictures of food. How sad! But it was a lovely day!

28 Lessons Learned in 28 Years
  1. Never punch an older brother in the stomach (even playfully) when his mouth is full of milk.
  2. Never leave a one-year-old unsupervised with a glue stick.
  3. Don’t care so much about what other people think.
  4. Christ’s perfection is enough. You are human. He is God. Live as what you were made to and it is much more freeing.
  5. Always ask who all is going when a guy who you do not like invites you out, especially when you do like his cousin.
  6. Holding your vitamins in your mouth until you can deceptively get to the bathroom to spit them down the toilet is much worse than just taking them.
  7. Unnecessary pain isn’t hard core. Always use knee pads when you play volleyball and allow the dentist to use anesthetics when you are getting fillings.
  8. Do not use qtips.
  9. Work for good bosses. It makes all the difference. I’ve been unusually blessed in this category.
  10. Do your best is using the finite amount of time God gave you well but don’t put expectations on yourself as if your time was infinite.
  11. Lordship means that we don’t have to stay in our sin.
  12. Choose your college classes based off of the teachers.
  13. Don’t doubt Joe’s silly opinions. He knows his stuff. If he says, “Don’t buy ikea frames.” Don’t buy ikea frames. It isn’t worth it.
  14. Stay out of debt.
  15. Don’t store Christmas presents or dirty dishes in the trunk of your car. If your car is stolen, those items might disappear.
  16. Road trips are almost always good ideas.
  17. Never say never to regions of the world, being a missionary, being a teacher, changing majors, a certain college. God’s plans are so much better than our own. Thank God for answering some prayers with No!
  18. Jr. Highers are awesome!
  19. Confessing sins and asking for forgiveness quickly and frequently makes for much better and more solid relationships than covering sins.
  20. I don’t need to get away from people or have a weekend or a summer break to rest. Rest comes as I faithfully do the tasks before me with the strength, priorities, and instruction God provides with a humble, dependent understanding of my humanity and God’s deity.
  21. Give thanks that you didn’t marry those boys you liked in highschool.
  22. Having parents that care is a blessing even when they make you redo assignments that your teacher wouldn’t make you redo.
  23. Do not threaten to give your mom who has hands that can strike faster than lightning a wet willy.
  24. Proofread, proofread, proofread
  25. Don’t crash a honeymoon or there might be retaliation.
  26. Plans don’t turn out like expected but they turn out as God expects which is better.
  27. Be content where God has you.
  28. Don’t doubt the Lord’s provision.
